    This is the homemade chorizo and potatoes on char-grilled (just over an open flame of our gas stove) corn tortillas. The side dish is Mexican Street Corn. I provided a recipe, but it’s this simple: use cooked (or freshly grilled) corn, mix with 2 Tablespoons mayo, 1 Tablespoons butter, 1 teaspoon chili powder, a dash of cayenne pepper, paprika, salt and pepper, and a handful of any Mexican style shredded cheese (cheddar works fine, too!). Mix well, pour into a baking dish and top with a bit more cheese. Place in a 400 degree oven for about 5-8 minutes, or until the edges are golden and bubbly.

    This homemade chorizo is by far the BEST chorizo I’ve ever had. I used the GFS bulk pork sausage. Follow this link for the recipe:
